Here's what you can do: Use MCEdit to remove the block or remove the Ender Chest mod, restart the pack, press OK to reload the world with the missing blocks, close the pack and add back Ender Chests. Your world should load up.

This is not a bug. It's intended so you don't have to keep crafting new cakes after you consume the last piece.

As UniZero said, it takes time. The more space you have, the better. If you want to use "bait", since that was added to the pack and not considered cheating, you can get animals to spawn right away.

Are you in peaceful? Do you have a magnum torch down? Is there a high number of mobs on the map already? Mobs do spawn in the pack with absolutely no problem, make sure something isn't keeping them from doing so in your client.

This has been an issue since 1.6.4 minecraft, and not a modpack bug. There's nothing I can do to fix this issue. Keep doing the fixes you mentioned in the "known fixes" section of your comment.

Named mobs show up on the map. That's how it has always worked. Not a bug.
