Basically the claims about dead mods are just false... All those mods are alive and well. I still use BC a ton because (like I've said before) cobblestone pipes are dirt cheap and simple, and I like the world-holes the quarry makes (screw nature!).
On a more serious note, though, all the mods you have mentioned are still alive and well. SO MANY people use all of them - please tell us, where have you gotten the idea that nobody uses them? If it's just your server, then your people are weird.
I don't see at all how ExU replaces buildcraft or railcraft... If you're talking about transfer nodes, those are just a new transport method, not a better one. Lots of people use Forestry for bees; that's the main purpose even more than farming, I think. MFR is OP - if you don't like it, don't use it or just remove it/find a pack without it. That's just balance.
As to the actual OP - AE2 is NOT too easy. I have one word - Channels!
As others have said, I use it alongside a barrel wall, as it would be a pain to make enough storage cells for all of my cobble... and dirt... and gravel... (that said, I agree with
@malicious_bloke about storage buses needing a buff. They seem like the belong in the early game, but for whatever reason they require a channel each, which is distinctly NOT early game).
Then you can begin using it for automating and autocrafting, and it's fantastic. It's challenging, but in an intellectual way, not a "you need more resources for this!" way (although some things are pretty expensive).
