There is one glaring difference between the current install instructions and that video. In the instructions on the minecraftforum.net for both MoCreatures and GuiAPI list GuiAPI as a core mod not a jar mod. Try placing it in the core mods folder instead if it is not already.

Depending on which pack you are trying to use there are youtubers that have videos that may help. There is Direwolf20 for the non-GregTech stuff. EdoreldO for the GregTech videos. And the Mindcrack pack users, DocM, Etho, BDoubleO and a few others that can be fun to watch and learn.
