Both mods use similar techniques for ore processing, and some rather loud voices on here [I'm not naming names] only use said mods for ore processing- hence all this unfounded bull about easymode.

Interestingly theres a distinct lack of comparison between hardmode Thermal Expansion vs Hardmode IC2/Gtech
(Hardmode TE uses steel ingots in machine frames, gears instead of ingots in machine recipes, induction smelter/pulveriser need diamonds...)

Personally, I think it would be better if they changed the scaffold mechanics entirely and added a generic 'scaffold extender' block. When clicked with wood, it extends scaffolds for you. Scaffolds drop wood. This would mean that people would no longer abuse scaffolds as fuel, and scaffolds would be actually easy to make for once (you'd only need the extender and some planks, not some annoying recipe which you constantly find yourself using).

What I have realized is that because TE3 is so well done, there is overwhelming appeal to use just it, therefore I have set it to hard-mode while the rest of my pack remains balanced around "relatively easy".

and how would you deal with multiple wood types?

No. You craft one scaffold extender for the base of each scaffold tower you create. (alternatively the scaffold extender could be handheld). For multiple wood types, there is a magical thing called the Forge Ore Dictionary that does that for you.

So you need to craft a load of scaffold extenders instead. Handheld tool might work though.

Unless you add a unique scaffold for every wood type; this has a pretty epic transmutation bug. Different wood in, same wood out.

why does scaffold need to be made from wood? It's not IRL (unless you wanna go back in time 50 years or so..) it seems strange to me that a mod like IC2, a high tech, modern/futuristic mod would add scaffolds made from wood :/

Just a thought, but use MFRs Vine Scaffolds. You can easily set up a farm for vines or get it from a MFR jungle tree farm.
