I'm not into ecchi, i went to a friend once and he wanted us to look at that. Only saw first 2 episodes. I can say it was umm... interesting -_-
I can describe ecchi with one gif

There is only one reason to watch an ecchi, and that is if you want to jack off, even then, watching an ecchi for any plot is like looking for a needle in a haystack, sure, it may be there, but I'm not gonna damn well try to find it.

Not particularly, often even the best mangakas have to include fan service to even be considered for publishing. I've found plenty of ecchi series with deep and absorbing plots.

No, you misunderstand, ecchi to the point of topless women or equivalent in every episode (a la dxd) is not to the point where fan service is required, and in most cases it worsens the plot rather than improving it. Although I will give dxd a point here in that its entire plot is based around fan service making it kinda make sense

That entire series is amazingly f***ed up. :D
The thing I love about it though, is that the whole twisted side of it is woven into the storyline. The brutality, the darkness, the gore, they're not just in there for sadistic voyeurism. They're in there for a reason. Like Hellsing Ultimate, and also to a certain extent like the Witcher games, it presents you with the question of 'What does it mean to be a human, and what does it mean to be a monster?", without ever giving you a clear cut answer.

I love Ishida Sui for making it, it's easily become one of my favourite series.

Yeah, I love the transformation the main character's psyche goes through. Easily one of my top 10 protagonists and amazing character arc.

Ecchi in Japanese literally means sex, can't get more literal then that and commonly refers to animated porn. The western use is slightly different referring to softcore hentai, at least in my point of view.

A better description is ecchi is perverted in the sense that the character is very clearly being used as a sex icon/object whereas fanservice is more just showing a character off in a sexual way.

Also, in ecchi almost every character is shown in a sexual way. In most other anime where fanservice is used there is a dedicated character for the purpose of protecting the other characters from being sexualized

And the animated porn is referred to as hentai even in Japan but even then it can just mean perverted.

And I don't think you understand, series with fanservice are labelled as ecchi.
