For the alloy smelters, I would recommend just having 1 interface which pushes into a crate that is then extracted out of with round robin. Saves on interfaces but also is far more accurate in spreading the items out.
That's not a bad shout, but you might have issues if trying to craft more than one type of alloy at once.

In some ways i'd be quite tempted, if I ever carry on with AoE, to just have a ton of Alloy Smelters, and have groups reserved for just one type of alloy. So having say 60 alloy smelters, and then having 10 just for Electrical Steel, 10 for Energetic Alloy, 10 for vibrant and so on.

Here's what I did:

One interface interfaces with a crate. There are 32 alloy smelters, and all AE2 patterns are made to craft 32 of the target item instead of one. Conduits are used to connect the crate with the alloy smelters, and counting filters are used to make sure that only one set of ingredients is put into each one at the same time. Speed upgrades (forgot the number) are used on the conduit that pulls the ingredients out of the crate, so that 32 items are pulled out in each operation instead of four. Also, round-robin is activated. So in each operation, 32 ingredients are distributed one-set each to the alloy smelters. This results in perfect synchronization. Limitations: the setup can handle recipes with up to 10 ingredients overall between them, because the filters can't filter more than that. Also, this setup can't be used to make items that require the same ingredient in different quantities as another item made by this setup. If you want that, you'll need a second setup.

Certainly makes sense to use this method for the enderIO smelter exclusive recipes, tell me though, for the alloys that can be made using other methods (like the arc furnace) should I keep the setup as-is and just add additional arc furnaces with the ingredients split accross them using the same method above? This way 3 arc furnaces could make 36 alloys in one stroke, 4 could make 48 and so on...

What does an end game setup look like? Are we talking 30 alloy smelters? Happy to invest now rather than keep tearing stuff down when I realise I need more ;)

More like 20 smelters an alloy. You need several thousand at once for the creative items

I was using 32 alloy smelters. 3 arc furnaces may be faster, but only if you can automate them to use all slots. That's doable with RFTools Control I think, but I couldn't be bothered so late in the game. My one arc furnace was used only for stuff no other machine could do. Also, the arc furnaces take up way more space and are much more expensive to build. I did make my Manyullyn for the final recipe with the arc furnace, but only because there was so much of it to make that the slots didn't matter much because the input was full most of the time.

I setup the distribution with RFtools control - I even made a tutorial for it :)

I know RS has the option to have level emitter's output redstone during crafting, but I don't know if AE has a similar option, might be useful to automate the boiler. Unless you do it with Integrated Dynamics.

I think RFtools control could monitor the internal temperature to keep it sitting at 99°C for on demand singularities then the pressure plate could kick it up to 100°C.

Yep, can confirm AE2 absolutely does have the ability to make it emit redstone signal from an emitter while crafting. Just needs a crafting card if memory serves.
