Nether Fortresses tend to follow after each other in series, if you go East or West. So you guys just need to find only one fortress and if it isn't a good Fort then continue to go East or West to find the next one.
Upgrade to Optifine version C3 to fix your problem.

He is changing the cost to 30mU in future versions. Plus I only assumed as I'm not sure how to the costs work out so until you see otherwise you can assume my math is wrong.
edit: And yes looks like I screwed up the math badly =/
I haven't tested out the new farm blocks since I have been busy with bee and server management stuff but if I assumed 1 operation counts as harvesting and replanting a single tree... Then 28 1/2 stacks would equal about 121 trees. I'll have to test out the farm to see what counts as a single...
I believe someone made a pull request to take care of this issue with ExtraBiomes XL, will have to wait for the mod author to have time to update. Keep in mind that he has very little time to do anything for the next few months.
According to the picture you provided the server still has the old files so I would download the new 8.01 server zip, easiest way at the moment would be by going here: http://feed-the-beast.com/download.php
Looks like your server rolled back to an older version of the modpack automatically. If you pay for a service to host your FTB server then you need to talk to your server host. If you host the files yourself then it looks like you did not do a proper installation.
Galena is new and yes this intentional, apatite will be a little more rare but when you do find any, it will be in very large veins like this. I recommend using a fortune pickaxe on it if you plan on using the new farm blocks added by forestry.
SMP will allow you to use Optifine not sure of what bugs would possibly show up, SSP __was__ broken though... at least until Optifine updated.
Optifine has been updated to version C1 and now works with the later versions of MinecraftForge.
