I had the same problem when the oaks would grow they tended to remove the track if they where grown at a level lower. I leveled out my farm and it stopped nixing my rails.

Pigman Spawner -> Gold Bees or IC2 crops for just about any base product with considerable work/tinkering. IC2 crops would likely need significant farms to produce enough, bees would require alveary(s) to keep up.
