To learn the new mods and changes in 1.7, I'd recommend infinity. There's very few recipe changes, so you won't get as confused if you switch to third party themed packs, and it has most of the mods you'll hear people ranting about on the forums.

Yep, I'd suggest magnum torches as well. For your mob farm, cursed earth and auto spawners, among other things, will still spawn mobs in the range of your torches.
