To go to sleep at a "normal" time and not deal with schedules and tiredness or go to sleep when everyone else has been awake/asleep for hours and deal with the scheduling problems?

make the ore production faster? or make the procession completely automatic? note ex nihilo ores
 
Completely automatic, although in my mind those both kinda go hand-in-hand, kinda anyway.

Ex nihilo resource gathering or bees? (assuming you already have access to all the bees and just have to maintain/automate them)

Depends on my mood really, and your definition of "normal" sorter (trains? Golems? Pipes of various mods?)

Normal dieters because I have never even installed computercraft

I already know how to code, and I know how easy that was to learn so I take the first one
