or really crappy computers or they just like building pretty things or they are severely arachnophobic or, or, or... Minecraft is a sandbox game that a lot pf people play in a lot of different ways so meh.
I have played hardcore superflat (back when superflat meant nothing other than what you could get from villagers\villages) it was fun for a change I died eventually after I had a stack of Iron blocks (and when you realise just what a stack of Iron blocks when you cannot mine at all means...) by falling into my slime trap pit oops.

Peaceful is fine when you're in a test world, testing mods and builds and whatnot.. but for a serious play world... nah, peaceful doesn't do it for me (I have it on easy)

I've played easy, normal, hard and now hardcore. I often switch between them for a change, it's quite fun actually

If you want to understand hardcore, think "rogue", or "nethack", or anything like that.

Peaceful? Maybe you just want to build, and not deal with mobs.
Maybe you want to make one of them great themed rollercoasters.
