My kids play minecraft - in creative mode because the stress of having a health bar is just too much to manage.

I try to teach them basic survival style building anyway, but its pretty useless as they can't harvest anything - and keep on destroying their houses - because the left button just destroys blocks.

Or put them in Peaceful with high-end armor for near-invulnerability.
To expand on this:
Peaceful removes damage from monsters and worries about hunger
Use NEI in ccheat mode for diamond armor with
Helmet with Aqua Affinity and Respiration X (NEI can exceed normal echantment limits) Remove worries about water (mostly)
Boots with Feather Falling X (no fall damage, unless they really, really try)
Chest and Legs with Fire Protection X for worries about lava

All with Unbreaking X for infinite durability.

I also recommend the keepInventory game rule. With it on there is basically no penalty if you accidentally kill yourself except having to walk back to where you died.

1. Peaceful is out as they love to spawn monsters from monster eggs. they just don't want to be attacked.
2. Armor solutions are out, as they love to change what their character is wearing.
3. Creative mode's flight is very handy for them

Advanced genetics and MPS is what you're looking for then.

I just got another vanilla idea. There is an Instant Health potion effect that can actually be applied via commands. So you could run that command to give them the effect for bazillions of seconds and it will replenish their health for that time, making them basically invincible. I'll try to find the code for it.
Edit: Here you go
/effect yourkidsnames 5 1000000 1 hideParticles
This should give them the Instant health effect lasting for a million seconds (max time) and it will replenish 3 hearts every tick, so they're pretty much invincible (might be a problem if they fall into the void.

Edit: Better idea. The above does not protect from them falling and other instant-kills. Resistance 5 howewer makes you take no damage at all.

This all also assumes I have control over when they decide to start a new map.
They create completely new games. often. For reasons I just don't understand.

I definitely understand your situation, but I am not sure that there is a solution that can cover all areas at once.
I am not sure how old your kids are, but one solution could be to try (I have a kid myself, i know how hard this can be) to teach them the ups and downs of the solution you pick.

It it unlikely that a modder will put together a mod like this, since it would mostly be used by a very small group, but of course you could be lucky enough to find a modder with the exact same issue.

Only complete solution that i can find you (and is not ment as a joke or an insult to the thread) is to learn coding yourself, and do it. I would guess that such a mod would be fairly low tech.

I hope you find the perfect solution for your kids, and good job on letting them play minecraft :)
