Bug Skyfactory 3 - Game Crashes after Loading Mods

Whenever I press launch, everything will be fine until the loading screen is at 6/7, which will then start to crash and just say "An unexpected issue occurred and the game has crashed. We're sorry for the inconvenience."

There's no button to see the crash log or anything like that, only the close button.

EDIT: It was working perfectly before Windows decided to do the Win 10 update yesterday.
