I used to play with Portal Guns all the time, they were cool, and functioned just like the ones in game, showing what was on the other side of the portal. Now though, I got one thinking nothing changed, and now they're pretty boring. Is there a config option to enable the old types of portal guns?

Nope.
Sadly it was so hard on servers when multiple players all had bacon guns and where able to have multiple portals up.
For one it had to load not just the destination chunk, but every chunk that could be seen there, so instead of each portal being "loaded chunks +1" it was basically "+1 player load per portal".
Now, the good news is, iChun has a proof of concept for a much more efficient system of displaying through portals.

So, I suspect when the rewrite is done, and updated to 1.9 it WILL have that option.
