Need some help with Apple Milk Tea mod

My friends and I have been playing the Horizons Daybreaker modpack for a little while and we are all very confused about how the Apple Milk Tea mod works. The wiki is in Japanese and what few mod reviews I found could not answer hardly any of my questions.

So I hoped that maybe a member of the community could either explain the workings of this mod- in particular the brewing and the missing recipes for grape, lemon, orange etc. or point me in the direction of a review or walkthrough in English that could explain things instead.

I really like this mod and the parts that I do understand are pretty cool. Unfortunately the lack of NEI help and a decent English translation for the wiki or any of the decent looking reviews is making it hard to enjoy.
