Mass fabricator, (you may have to enable it in the gregtech config), you'll need a fair amount of EU/t and scrap to get it at any appreciable rate.
You can also mine it, though you won't find much without a dense ore world from mystcraft.

You can also use the gregtech matterfabricator if you already have enough iridium, chrome and titanium to make one, though it uses a LOT more energy than the mass fab by default and HAS to have scrap unless you have tweaked the config.

If you have Gregtech enabled, you can find some spawning naturally in the world. Its incredibly super duper rare, like 1 block every 5 chunks or so (but that can be changed in the config). You have to get some of this before you can go back and create a matter fabricator to produce more UU matter. I've found that the best way to do this is to go to the Nether, as the chunks are mostly air and the stone texture sticks out like a sore thumb there. You can find 3-4 blocks of it in 10 minutes if you're lucky. Alternatively, you can just re enable the mass fabricator in the Gregtech config and use that to make UU matter to make Iridium.
