FTB Pack Remove OP endgame?

Me and my friends want to get back to minecraft, but we get discouraged all the time for reaching endgame and having OP armour/weapons and tools (last played through Mindcrack pack) Making it, well, just goofing around. Is there some guide or thread I havent found, wich take a pack and shows you what to remove to avoid this?
We like to mess around with a bunch of stuff, but having Advanced Solar panels, limitless energy running 8 quarries full speed, while protected in uber armour just takes the edge of it. We want a challenge that continues to be a challenge even when settled and nested.

Any advice, tips, pointers, hints?

Rather trying to remove it alltogether, my server can tak ealot of players at once, and Ive experienced that telling them to not use stuff just doesnt work =)
 
Instead of removing anything why not just add some mods that enhance difficulty? Gregtech, hunger overhaul and infernal mobs?
 
I also saw that mod which adds giant squirrels.

Adding that is totally nuts though...

Anyway, try setting some "rules", or guidelines for yourself that limit certain things. For instance, in my current world I am not allowed to visit the overworld; I have to stay in the nether at all times (unless the only way to get something is to use water, or another overworld material, but generally I will just make a Minetweaker recipe for it). This is so limiting that it took me about 7 machines to get cobblestone even slightly efficiently.

Or just play Agrarian Skies/BloodNBones/Magic Farm 2

There are modpacks that are more RPG-tended rather than sandbox. Sandbox games always end up in OPness, because that's the progression of resource accumulation/technological advancement which leads into higher order efficiency/productivity. That unless of course you prefer doing the same thing over and over, knowing there are better ways, such that it is almost insanity.
