So I recently found out that my server is using a version of linux which doesn't support Java 1.8. Upgrading it to a short-term support version isn't an option at this moment in time.

The latest version of thaumcraft uses some methods only available in java 1.8 so whenever somebody places a golem, it crashes the entire server with a method not found exception. The server is currently using java 1.7.

Would it be possible to simply downgrade to a previous version of thaumcraft and still use my existing world or would that corrupt a lot of things? If it's possible to downgrade, can somebody recommend a version of thaumcraft which would be usable with java 1.7?

I'm using Feed The Beast Infinity Evolved if this changes anything.

Thanks :)

Tough question.

My suggestion would be to upgrade to 1.8, but since that's not an option, things get tricky.

Make a backup of the world, downgrade TC and see what happens?

Your information is incorrrect. There is no version of thaumcraft on 1.7.10 that requires java 8. And if it was a java 8 requirement that was causing your issue, you wouldn't even be able to launch the server. I suggest you post the crash log from the server so we can try and discern what's actually happening.
