Biofuel Automation Setup Question

So I'm currently building a new biofuel set up on a new server. We're using the Ultimate pack so I've made use of the MineFactory Reloaded tree farm set up to run my boilers with charcoal and biofuel made from the saplings. I'm trying to set up my fermenter so that it switches from apple juice to water and back as necessary. My apple juice is currently getting stored in a Xycraft multitank. I'm trying to get it setup so that when my apple juice tank gets about half full, it stops the water from going into the fermenter and switches it to juice. Then as soon as apple juice runs out, it switches back. I've tried a few different setups on my single player world but nothing has really worked just yet. The biggest drawback I've found is getting the system to start when the tank is half full and then to drain the tank, not just constantly turn on and off as it bounces at the halfway level.

What i'd suggest is using computercraft along with a gate reader, either that or you need to make some and gate magic

Well, for using the apple juice at the halfway point, I remember there being a block you can embed in a xycraft tank that when fluid touches it, it emits a redstone signal.

This way, you can put one of these at the bottom, and one at halfway, connect these both up to a toggle latch, and I believe that should do the job. As it will fill up to halfway, causing a change in state to on of the halfway one, toggling the latch, this then leads to draining the tank which will turn off the bottom one. When it gets an inkling of apple juice inside again, it will change state, toggling the latch off, and repeating the cycle.

(All done in my head, so subject to mistakes)

It may not be entirely what you're looking for, but I will explain my previous setup. The input was an SC2 farm, but the effect was the same.

I just had 2 fermenters, 1 connected to my apple juice line, and 1 to a water line, with the mulch from both coming from the squeezer. The apple juice line was usually stuttering, but it was also the first one that the saplings went to, so it would use the juice before anything else.

For me, the bottleneck was always the stills (even when I went from 1 to 3). The fermenters could always outproduce the stills, so I made sure that, as with all my renewable systems, the overflow was voided (I kept a barrel of saplings, and a barrel of wood, the apples were always used up).

if you have gt installed, try using distillation tower, it has better conversion rate(2:1).
my setup is 3 fermenters all running on water and mulch; 2 run on plantballs and 1 on jungle tree saplings(1.4.7 so i assume they are not nerfed). 1 distillation tower handles with this setup with no issue and probably could take 4th fermenter.
