Inscribers should work with most mods' pipes, I think, but they're one of those blocks that need items to be piped into and out of certain sides, so that's probably why EnderIO didn't work?

You just need to pipe into the controller and it should move the items into connected drawers. I've been watching Pahimar and Direwolf20's AgSkies playthrough and their drawer wall is set up that way.

You shouldn't have to do anything special with the controller... Maybe you should post a screenshot of your setup in case the problem is something obvious to someone with more experience with the mod?

Last time I got slimes via slime chunk they didn't really spawn until I made the room as big as the chunk (actually I think it was 4 chunks lol). Also, I think torches affected their ability to spawn, so I put jack o'lanterns in the floor but that might be an old issue. You want their room lit...
