Why do you start Minecraft with almost an entire day of no hunger decay?

What sort of saturation do you start with? Every playthrough I nonchalantly pick up a couple steaks worth of food to survive the first night, because surely enough as soon as night hits my hunger steadily starts ticking down.

What causes the massive plethora of saturation when you start? How can that be reacquired later?

Thanks!

doesn't difficulty also affect things such as hunger and saturation?

I am not sure, but if you install spice of life, you can change the config to just show your saturation and not affect normal hunger mechanics. This will let you see your starting saturation.

Natura berries will increase your saturation (can keep eating them after your hungry bar is full). It's a small amount per berry, so be prepared to eat a ton. I'm not sure if there is a maximum you can consume or a max amount of saturation it will give you. I always seem to run out of berries. Perhaps someone else can shed some light on this?

Your saturation bar is exactly as long as your hunger bar: So 20 berries will fill it. In the 1.7.10 DW20 build Natura does not allow further berries to be consumed past this point.

It's actually AppleCore alone that does that, however Spice of Life is dependent on AppleCore.

You sure it is not because you start doing things at night that actually cost more hunger/saturation? Like mining and fighting?
