I don't see how the speed of SATA hardware would cause an issue. I run my gameserver from a solid state drive. It just makes it better!
Is there a problem you think is caused by that?

Change you FTB installation directory(in options tab) to into SSD.

If you want to move other files(I don't recommend) there are hidden and almost nondocumented command line options. In this case you can use -C and -D to move launcher's cache and dynamic directories.
