And I want to farm everything with them. Literally everything
So I know with upgrades you can change the size of your farm, but I also heard some people saying larger farms weren't that efficient. So I was wondering how large my farms should be, or if i should just make multiples of the same farm.

It is absolutely true that many small farms are more efficient than large farms. But it's also true that logistically it's easier to automate one big farm vs. many small farms. So assuming your energy situation is locked down you can just make huge farms if you wish.

My preferred setup–which is not the most efficient but is very convenient to automate–is one upgraded harvester over an area of multiple planters. This means I can do one type of output processing

with the newer MFR farms I like to to do middle size farms with mixed machines. I go 6x6 with 2 harvesters on ajcent sides and 4 unupgaded planters. Seems to work really well just needs a little extra work with the piping and powering. It looks somethign like this.

Still playing with it but it seems to work well not much of the 'skiped' plants you find it large farms and the replanting is quick.

For wheat one planter and harvester with emerald upgrades seem to do good job: http://i.imgur.com/I4gbSCD.jpg . So with that long running farm most of the spaces are working (there is about 50 that are either fully grown or unplanted), so you have about 560 places with growing wheat, it is more than total area of planting with next upgrade, 529. For trees however smaller farms would be better, because one tree takes 25 possible spaces with its leaves, so you want it harvested as soon as possible and with even reasonable sized farm (9x9 or 11x11) harvester is chopping down trees most of the time, gain from bigger farm is negligible.
