I've been watching youtube vids of people playing around with this and one thing always baffled me.. they are able to gather several leaves or gathering every block of wood from a tree by hitting a single block.. is this an additional mod or setting on server side.. and can it be replicated in solo play?

The mod is ore excavation. You have to hold down a hotkey while breaking a block. It works a lot like veinminer. You can find out what key it is set to by looking in the controls setting menu.
In addition the hotkey does not work with an empty hand. Tools will be used up as well as saturation for each block. And do not hold the hotkey while working on your base...seriously, don't!
