I just started playing Sky Factory 2 (the 2.4 version) this morning. I am following Bacon_Donuts youtube series but I have kind of hit a question mark. After crafting the oak sieve, I was trying to figure out what I needed to sieve to get bone meal. So I followed what Bacon did in the video and opened the inventory, and typed "sie" in the search box at the bottom. He explains that you should right-click on the picture on the right and hit the left and right arrow buttons on top of the window to see what can be sieved and what % chance items have as being dropped items. Well, I did that but the only things I am being shown are the "Fuel" window and the "Chisel" window. I am not getting the rest of the windows that show the list of what you can sieve or what drops you get from those sieved items. I do not know if I am not pushing a button I need to push or if there is something in the options window I need to check on or off, so if anyone reading this has the answer I would be truely grateful :D Thank you for your time!

Look for bone meal and left click on it then use the arrows and that will tell you how to get the item from the sieve. If you want to see what can drop from the sieve then do the same for gravel, sand and dust.

So just to add on to what he is saying, in NEI you can hover over any item and press U or right click in order to see what that item is used for. You can also press R or left click in order to see it's recipe. IF you are wanting to right or left click they would have to be in the NEI interface, if they are in your inventory simply hovering over and item and pressing U or R respectively. What bacon donut did was just look up the sieve in NEI and right click it to see the recipes.
