So Poppycock I said I was working on something like your cow poop collector and I would show up my work when I got to my PC.
Well here we go.
Pig Pod (Poop Overdriver Device) low foot print high poop output. Easy to build.
Ok so first this was my original idea using cows.

As you can see its kind of hard on the eyes. Also there is a cow in the middle and hes a pain to get in there even with a gravity gun. I scrapped that idea and was looking into other ways to do this. I ended up with pigs for two reasons. One they are 1x1 animals but Two unlike chickens don't create items while hanging around. This means you can pack the in tight and once built you can forget about them.
One thing to be mindful about his build is because of how liquiducts work either plan ahead or use BC water pipes instead.

Each layer is 4 pigs with a center pipe linking all the layers together. You would need to use some way on moving your pigs in layer by layer as you build it. But that is not a huge issue between gravguns and safarinets it should be easy to just plop them in. If you do this you want to do it with the outside wall two blocks high at a time.
Here let me show you a basic build.
Basic layer and get the piping down. If using liquiducts make sure ALL your piping is in place before you put down your first pig to avoid having to tare it down to fix things later. Or use BC pipes it really works well with ether system.

For each layer you want to do the walls two blocks high then drop in your pigs. (one high they might jump out)

Then cap them

And repeat to your height of choice

This here houses 20 pigs in a fairly small foot print that can tile fairly well with a little fore planing.
