We have many ways to acquire materials through farming, mining and automation. We also have many way to produce power in small or immense amounts. ( ref. MC 1.10.2 SkyFactory 3 dev work by Darkosto producing 1 billion rf/per tick, sometime last year.)
So what's next? I mean for 1 billion RF per tick, I would love to be able to do something really nice beside more automated material acquisition.

For me, I like to mix the tech with the creative and build a working village with all that stuff. Bonus points for adding in minecolonies to populate the village.

Like, for example, I had my tower of power generating power with lightning rods, but that power wasn't just to fill up the big shiny ball, it powered the lanterns that keeps my village safe.

Otherwise, the answer is just to start over again with another pack, really.

Find something to build. For me while the automation and resource gather is a part of it. My goals are to build something with it. Use the extra blocks, textures and tools likes Chisel & Bits to actually build something. Build a city or rustic old world town, a modern day sea port, but build something.

I agree with everyone, building is the core aspect of Minecraft. I never feel complete even though I did all the progression and such, become OP, automating everything, but still live in a cave.

My usual "goal" for any pack, and what I tell most people the purpose of modded minecraft, is to get to where I have nothing to do. All processes are automated. Collection, processing, crafting and use of items. I want to get to the point I request super complex things and let my monstor do all the work. Click button, get item. I then rebuild and clean up to the best of my ability so the world, at least from the surface, looks kind of like there is nothing special going on. All processes are occurring out of site or out of dimension.
