Hi guys, I just went to the nether on my server, and it has spawned the portal in a cave. Not only that, but I've mined out in every direction with a scatter laser, and it's still cave as far as the eye can see. Like, no open spaces. Just netherrack/ores solid in every direction. This is the first time this has happened to me, so I was a little stumped. Is there any way to generate a new nether (that will be different)? Thanks in advance!

Find dimension -1 in your save folder and nuke it from orbit.

As an aside, what is the Y level you're at? The nether can be a bit dense if you are too high or too low IIRC.

If you use the same portal in the same location, even though you regen the nether, you'll have a very high likelihood that it will be the exact same. Choose a location far away, and try to use a different y-level.

i once had almost the exact opposite problem. My nether portal spawned about 60 meters above a vast lava ocean. The platform was literally something like a 3x3 stone landing coded in for the portal itself I imagine. In midair. WIth no access to solid ground anywhere. Had to sneak-build a bridge while ghasts were perturbed with me.

Are you using a minimap? Mapwriter (Opis) has a really good map of the Nether that shows pretty much all the features so that should help you find a way to some interesting features. Or, open your save in Unmined, which is great for exploring the landscape.
