Hardcore survival is a personal favorite. A little less forgiving them standard survival however. WAY less forgiving then creative, lol.

Try these 2 if you haven't already- Decocraft mod and the twilight forest

JEI gives you a list of all items in the game and allows you to view recipes and usages - basically the recipe book except good. Essential for modded Minecraft.
Any gravestone mod, so your items don't despawn when you die.

Are you asking for modes or mods? If modes, survival is the most fun, others i find boring after a point.
