It's very possible that you've had an error that's quite common recently in regards to your MushroomIsland spawn. See here for more info on it https://www.reddit.com/r/feedthebeast/comments/3q1gir/infinity_1121_lots_of_mushroomisland_biomes/
I think I had the issue too
For some reason BoP tries to limit ocean size, and it does this by replacing Oceans with Mushroom Island.
I disabled the feature on my server via config - while a few thousand blocks around spawn are still mushroom-ish
It should mean that any chunks in the future will be less mushroom when they get generated.

New start #4: Episode 1:
Decent spawn, pretty cool.
The trees here are seriously huge.

found about 4 sheep near here, thats going to be good.
TON of rubber trees. they seem to spawn in clusters of 4-7.
Found a couple hives, that might be useful.
and a bit of clay, yay!
A random stack of gravel ore.
Uh-oh. I've heard bad things about those.
So, I switch to peaceful

And my small house.

small update here, no pictures.
I have a lot of witchery seeds which suprises me, because there aren't that many plants. what suprises me more is that I have no pam's seeds.
Botania gen seems to be normal.
I also finished the walls, and made a small mine.

Episode 2: mining trip
Started up my garden today. Me being a vegetarian, I won't be killing any animals.
Why should I farm animals then? every animal has SOME use. well, except rabbits.
Went mining today, and found a TON of this stuff.
My first iron ore!
Dense iron ore, and some sapphire.
as I was coming back up, I found gold!
Nice little cave. Urainium, redstone, rubys, silver, and more! Also I found 2 oreberries. I'll make a farm for those.
My jaw dropped down to the floor. 9 DIAMONDS!!!

Finally I found a build journal that does infinity hard mode- I was beginning to think that I was the only one crazy enough to enjoy it...
