So with the most recent update my resolution has changed and it's quite hard to read any of the items anymore, is there a way to change it back to what it was?

I just had this issue, here's how I resolved it:
I tried flipping around the GUI Size option under [Options -> Video Settings -> GUI Scale], but that didn't do much. So I very slightly increased the window size (just dragged the corner out a bit) and it fixed the problem.

In the launcher, click on the Options tab, then Advanced Options. Among those are window size parameters you can set for Minecraft when it loads. Is that what you're looking for?
Alright, dragging it out fixed it, now I just need to figure out what size it is at now so I can set it to that window size parameter.
