I must've clicked something but now when i hit tab there's no huge list of items and such and i have no clue how to change it back.

Are you referring to losing NEI ?

Escape out of everything, then hit the E key. Now hit the O (the letter, not the number zero) key. That should bring back the NEI inventory in all its glory.

I've had this happen to me and was flummoxed for days.
