I want to play with GT but have all the recipes and all the hard stuff that GT brings reverted back to as close to vanilla as possible. Does any one know which are the options in the config to do that and where they are?

Not knowing which version of GT we are talking about makes it a bit hard.
But if you are using the 1.6 version you should check out the Tppi modpack. You could probably just snatch the configs from there.
There is also a Tppi2 in the works for 1.7 but no idea when it will be ready.
Ehm I have no idea. If it is on the launcher I suspect the password is only available to those who are betatesting it.
I'm not sure how accurate this may be, but from what I can remember of GT when I used to play it back in 1.5, there might be a singular option that flips it all over in the GT config file. Something like easymode=true/false, that generally changes the taste of the mod, so fiddling around in there yourself for a little bit may be easier than trying to rip the configs from another pack.
Although, as indicate, it's been a really long time since I've played GT, so this may have changed, or I may just be misremembering.
