I'm always bored in Unleashed so can anyone give me some goals to accomplish? I would like to play with at least every mod once.

Breed the draconic bee using apiary pipes then use ender chests to send them to a AE system where they can be kept until they are auto crafted. It would be an interesting design hope it helps.
If you're bored with one mod pack, why stick with it? There's many other mod packs you can try, or if you don't see something that grabs you, make a custom pack that does! It does require a little extra work to make sure that everything plays nice together and the configs are tweaked nice, but there's something nice about playing a pack customized to your play style.
Get every species of bee. For extra points, get every species running at the same time. For double extra points get them all running in alvearies with automated frame production keeping them at max production chance.
As soon as you get your first diamond use it to make a portal to the Twilight Forest. Proceed to defeat every TF boss without mining - just using what upgrades you get from raiding their lairs.
Play hardcore mode with UHC rules (no natural regen - only golden apples, beacons, and potions).
Just set yourself some limitation and try to overcome it.

sorry to say, but if you can't find any goals to work towards yourself, maybe you've reached your end of playing with Minecraft...
but it's actually quite easy to find goals to accomplish, instead of trying to build huge awesome builds, you can also set goals with restrictions. for example how everyone is now playing Forgecraft3/FClite, with no teleportation of items/liquid/power
Make a system that takes items from quarries/automatic farms (whatever you have to set up) and filters the items it needs/doesn't need to autocraft the most complicated item you can think of, in the most efficient way possible (ie every ore block you get from the quarry is put through an ore doubling process) and do this all without using AE.

If you are always bored of Unleashed you should probably play a different pack. I get bored in Unleashed too, so I usually find a bunch of mods I've never used before, create an instance, and just mess around.
And if you really want a goal for Unleashed, automate everything using Railcraft.
