Is there a way to keep the chunks loaded, whilest being offline, like there was with ChickenChunk's chunkloader?

If you are on a server, yeah you can use any mod that has a chunk loader available. If you are playing single player, you will still use the chunk loader, but will need to keep the game running.

Going on with what Captain Obvious said, it is an FTB pack so FTB Utils Chunkloading is always a thing.
Check the top left corner of your inventory and click that little map.

Util Chunkloading wont work if I am not on the Server, will it

Again, the game has to be running for the chunks to be loaded... So if you are not on a server, you will need to keep the game running to load chunks.

The thing is that I am playing on a server, so it should work, but it doesn't.

Talk to your server owner, make sure they allow chunk loaders in the first place. Most servers put a restriction on them (as in how many chunks you can have loaded)

If you're playing on a public server, there is a large chance that all chunkloading is disabled.
