Which mod controls item and mob info when looking at them with the crosshairs?
My daughter has turned this off somehow and I can't find the hotkey to enable.

Maybe you are talking about 'The One Probe'?

The default settings when I first started had it turned on without having to hold an item. In previous mod packs it was an option for NEI or waila but I can not find the setting in Beyond.

Its the one probe mod. You can either change it in the mod configs or theres some changes that can be done using the One Probe Note you start with. There might be a control for one probe to hide/show as well (you would need to check controls listing).

Well, the setting is called 'isVisible'. It's easier to set it in mod options.
