Formatting SSD for Performance on Linux

I got a second SSD for my server (ubuntu) and I'm new to formatting drives in the *nix environment. There are a ton of options, ext*, FAT, XFS, NTFS, and so on. I was wondering if you guys have any opinions on formatting SSD's. More specifically formatting for greater performance and drive life. What formatting type would you guys recommend?

With Minecraft having a high IO I was looking at possibly modifying the /etc/fstab with "noatime" Will this help if it's a non OS partition? Are there any other schools of thought here?
