Field of vision in people can change, but the thing is, the faster you go, the smaller it gets, not larger..
The problem is, for the change to occur in a great enough amount for your brain to register, it requires you going at approximately 250km/hr or faster.
You're right in saying the default field of vision is determined by your eye structure, but another important factor in this is your sampling speed (for lack of a better term)
Your brain doesn't see motion, it breaks motion down into samples of the world in order to collate information and make it manageable (there are defects with the brain which makes people unable to see motion, and thus we know how the brain sees it) So, once you start going faster, when your brain "samples" the object the first time, it's far away, and when it "samples" it again, it's gone past you for a dramatic example. In this case, your field of vision would be incredibly small because your brain is only able to see things which are far away from you.
This does happen with people, but we just simply don't travel fast enough in reality to make it visible.
