I can't break/harvest the grave from openblocks. I can't harvest some beehives like the unusual beehive even if I have a scoop or even the manasteel scoop. is there a setting I need to change? I installed the server yesterday.

Are they in the spawn chunks, and you are not an op on the server?
 
the problem was solved by switching to survival instead of Adventure. but why can't these blocks be interacted with in Adventure mode?
I have seen that Magic bees beehives cannot be harvested in Adventure mode, but regular forestry beehives can be.
 
That would be a bug with Forestry then.

Adventure mode prevents players from breaking (and placing? I forget) blocks, only to allow interacting; opening doors, pressing buttons, etc.

This game mode was added for map makers who create "adventure maps" in which the player should not break/place blocks

you can destroy blocks if you have the correct tools, thus for stone you need a pickaxe, for wood an axe and dirt a shovel.

Which pretty much renders adventure mode moot as how many adventures can you structure in which the player can never encounter an axe, accidental or otherwise. With the first axe, comes the first log, the first log the first pickaxe, with the first pickaxe, cobble, with the first cobble, your "Adventure" world is quarried to bedrock.

Until you run out of wood and forgot to make a new axe :P

Look for villages? They will occasionally have one in their chests. Or you could trade a villager for emeralds (something like wheat) and then buy an axe from another villager
