You have to go into your network adapter settings and set Hamachi to a higher priority than your physical network connection. This will make it so when you "open to LAN" in Minecraft, it will use the Hamachi IP over your computer's IP.
The specifics are different on various versions of Windows, but it's usually somewhere under your network connections.
