The title pretty much says it all. I messed with the configs of DW20 a bit too much and screwed some things up. I tried force updating to restore them but the configs were unchanged. As a last resort I am thinking that I will just delete the entire folder and re download all of it. Are there any folders that I should not delete so that the launcher still detects it or can I just delete the entire pack folder?

You can just delete the entire pack folder, if you wanted to delete the saves/worlds/texture packs/resource packs etc.
But if you want to fix your config I'm about 60% sure if you delete it it will regenerate when you load up your world/s, wait for another person to reply to confirm this.

It really depends on where the config is located. If it is in the config folder it should be changed back when you do a force update. If it is outside the config folder it will not be. As in if it is in the save folder. Deleting the config will regenerate it, but it will not be a Universal config from FTB it will be as if you installed the mods yourself and might cause errors either now or later when you try to update the pack. If the configs still do not regenerate after a force update there is a restart switch for the entirer launcher and packs. To do this delete the ftblauncher folder in the %AppData% folder on a PC along with the ftb folder that the packs are in. On a Mac that should be the ~\Library\Application Support\ftblauncher folder. This basic troubleshooting guide explains how to do it.
