I have recently downloaded and playing FTB Infinity Evolved and the my inventory is very dark and is hard to see any of my items, I've played around with the brightness and the GUI but nothing has changed. can any one help me ?!

You are probably in NEI search mode. Use your mouse to double click on the text box used to type in what you are looking for in NEI.
