I'd recommend starting with the Unleashed Pack. Subscribe and watch DireWolf20's YT Series. He's currently starting on Forgecraft 2 (1.6.2 mods), if you watch it you can learn a lot about mods :)

There is a mod in some modpacks(Not unleashed), called GregTech, which makes everything harder. This mod, among others, can be configured to become even harder(or easier.)

I recommend Unleashed. It has a wide variety of mods and multiple ways to get started. You can spend hours, days, weeks, and months on Unleashed and still not explore all the content. Some content is parellel (many ways to skin the cat) and many are serial (require more resources/power than what you have available).

Unhinged has fewer mods and provides more structured play. It is more linear in design and for many recipes, you are required to build prerequisite machines. Unhinged with the default configuration is considered 'hard mode'.

Personally, I prefer Unleashed and I self-impose my own rules/limits every time I create a new world, which is about once a month. Starting from scratch and getting to mid-game is perhaps the most fun for me.

GregTech is a mod which is meant for "veteran" players who like a challenge, although it is not a mod for everyone.

ShneekyCraft has a beginner focused minimalist modpack that makes a great way to introduce people to the concepts of FTB. You can later graduate to Unleashed.

The best way to start is to grab and be inspired by ideas you see on Youtuber's series and the like. It'll give you a goal, which is the most important part of FTB. Without a goal there is really no direction. With the bagillion mods, multiple solutions to same problems and cross mod synergies, it becomes a cluster-fuck of confusion. This is unless you have defined for yourself a goal.

That is to say the goal isn't the only thing you are aiming for, nor are you restricted to having only one. From experience, I have always done the most/had the most fun when I had a goal set in mind. Once you set one goal and complete it, you will have developed a sense of the research/planning you need to do to complete any project. Eventually you won't need to look elsewhere for inspiration, rather you will become confident in your own ability/knowledge to produce unique solutions to problems you encounter.

This is how I see it and how I have made FTB enjoyable and constructively entertaining.

Unleashed has the best variety of all of them, in my opinion. As for learning, plunge in headfirst. If you see something interesting, look it up on the wiki and if you see a curious link on that page, follow it and so on.
Personally, I play a slightly modified unleashed, I swapped out dartcraft for ars magica.
