Have you tried turning it off, disable the key for auto-jump, and close the game, without pressing X or in the task manager?

I would make sure you disable the keybinding to autojump. I think it is bound to the "B" key.

That still doesn't adequately explain why Minecraft would reset it to "on" at random times. Funny way of programming a game, if you ask me.

I don't think minecraft is reseting it. I was having the same issue. But I found out I was accidentally turning it on via the keyboard. So I made sure it was off and removed the keybinding. No more issues.
