There are a few methods. You could use another mods auto crafting and use redstone emmiters to disable the crafter when you have > 5 axes. You then just supply the crafter with the sticks and stone.
You can also use an interface with a crafting card and fill 5 of its slots with the axes. You will need to use 5 individual slots as axes don't stack. You can even access what's in the interface if you have a storage bus facing it.
My last EIO treefarm setup involved using only one channel and that was to hold and supply the wood. As I mostly used EIO piping.
I used 3 TE auto crafters; one being fed wood for planks, planks automatically ejected to another crafter to create sticks which auto ejected in to the last crafter to make the axe. I didn't bother having AE supply stone so I just whacked a ExtUtils cobble gen to it.
This was before I knew about RF tools auto crafters that can do the job of 3 of those TE crafters in one.
I mean you could do it purely with AE2 but I have found auto stocking crafting card interfaces to be mighty unreliable.
I only ever use it to supply things and for on demand crafting.
