Problem All cores 100% go!

So I've had some weird experiences over the last couple of days.

The server runs happily then all of a sudden all CPU cores max at 100% until the server death spirals and the box dies.

I have no idea where to start with this, I managed to get a timings snapshot before the last time happened.

Just a side note, Minecraft uses one CPU core.

Where to look for issues:
console logs, crash logs and ask your players what machines they are running on the server.
