Did you put the crafting materials into the carpenter's inventory? The crafting grid is not like the vanilla crafting table. You need to supply the carpenter with raw materials as well as show it the crafting pattern to use.

If you don't want to cheat, you could set your config to lock you in the recipe mode of NEI. You would then need to logout to change it back, which helps curb the temptation.

Forestry itself has another solution. If you set up all of Forestry's farms, they will be self-sufficient. In this case, a Wheat Farm supplies wheat and seeds to a Moistener which produces mulch and mycelium. Mycelium is used in a Mushroom Farm to produce mushrooms with dirt as a by-product.
