It seems odd that you're having troubles with inventory stuff. if removing FTB and reinstalling it doesn't do the trick, I would look to see if any weird keyboard settings (stickykeys for example) might have been accidentally activated and started causing problems.

Well, difficulty is server-wide and gamemode is player-specific. a server I'm on uses a similar setup (I'm not sure of the specifics but I imagine it to be similar to what is proposed here) so I believe it should work.
