Silly me!
I discovered the problem - my Pulse Audio sound output was set to Stereo Duplex instead of Analogue Stereo.
Correcting this fixed the problem immediately.
The audio is choppy (stuttering) on my Dell XPS 13 Developer Edition laptop and Ubuntu 13.10. Absolutely everything is updated to the latest version.
It sounds like all sounds are punctuated by short gaps of silence at about 2-3hz. It makes the game unplayable with the volume on. Oddly enough...
