Moving Personal server from VM to seperate Host

Looking for some build advice. Going to be running FTB infinity evolved with 2-5 people max. Currently I am running it on my PC. PC is running Windows 10, and in Hyper-V I have created a Debian machine with 8gb dedicated memory with the server on there. I also have a backup script running backups, etc. etc. besides the point.

PC currently has a i7 4770k, VM is stored on a PCI-E 400gb intel SSD drive. 16GB ram total, 8 dedicated to the VM. I would like to offload the power to a separate machine.

Upload speed is 20MB

Seeing as I don't need a GPU, I can probably save a lot of money by downsizing everything except the CPU and the SSD. Here is what I have thought about....

Operating System = Debian or CentOS7 or some linux distro of my choosing. Not too picky. Probably something lighter.

Total cost is around 570$ Would like it to be a bit cheaper but it wouldn't be a deal breaker.

Any advice? Pro-tips? I don't normally build servers so I don't have the real world experience. I might be overkilling something, or bottlenecking myself somewhere. Should I get a lower CPU? More Memory? I read the sticky and it looks like I should be ok with 8gb memory... Any tips are welcome! Thank you in advanced.
